I have become a little bit obsessed with buying healthy ingredients. I recently came home with flaxseeds, sunflower seeds, coconut sugar, and more, as I’ve been thinking of different ways to use these healthy ingredients to replace my not-so-healthy ones. Although this recipe isn’t an improved version of a past unhealthy one, it was almost like an introduction to this new world of healthy snacks.
The ingredients for these energy balls aren’t difficult to access, as I managed to find all of them at my local Pick ‘n Pay and Woolworths stores. Only five ingredients are needed: peanut butter, rolled oats, flaxseed meal, honey, and chocolate chips. If you have a machine, such as a NutriBullet, you can buy whole flaxseeds and make your own flaxseed meal. I used the Nature’s Choice brand of flaxseeds and rolled oats, as they were the only ones available at Pick ‘n Pay. I used Woolworths’ dark chocolate chips, but you can use any brand or type of chocolate. If you follow a vegan diet, replace the honey with maple syrup. I recommend using a natural peanut butter without the added sugars and salts.
Making these energy balls was a very pleasant experience. Not only do they take under 30 minutes to make, they can also be made in only one bowl (which means fewer dishes). I began by making my own flaxseed meal: grind one cup of flaxseeds in a NurtiBullet for less than one minute. After thoroughly combining my ingredients, I placed the bowl in the fridge for 10 minutes. This made it easier to roll the balls. I placed the balls in the freezer for a few minutes before serving. The wonderful taste was elevated by the fact that these were pretty much a guilt-free snack!

- ⅔ cup Peanut Butter; smooth or crunchy
- ½ cup Chocolate Chips
- 1 cup Rolled Oats
- ½ cup Flaxseed Meal
- 2 tablespoons Honey/Maple Syrup
- Combine all 5 ingredients in a medium bowl.
- Place in the refrigerator for 15-20 minutes so they are easier to roll.
- Roll into 16 balls (depending on the size of the balls).
- Place in the freezer for a few minutes before serving.
